Vegetarian Adventures #1

Well, I guess this is not our first vegetarian meal, but the first one that I will post.  It was a salad from Vegetarian Times and it was nice and light.  The magazine does a better job at photoshop, so you will see what it looks like fancy style.  The kids liked smearing their plates red and I got so red during preparation, but it was fun and good none the less.  Trent ate a lot of the oranges before we sat down and well it went over nicely with no leftovers.1FD_roastedBeetsOranges_MED-458x326.jpg

Perfect Roasted Beets with Orange Slices

Serves 6
The only thing roasted beets need is a light vinaigrette to be absolutely perfect. When making this recipe, roast a few extra beets to use in saladsand sandwiches or in other beet dishes. Try the recipe with Chioggia or golden beets as well.
  • 4 medium beets (1¼ lb.), trimmed and scrubbed
  • 2 medium oranges
  • 1 Tbs. sherry vinegar
  • 2 Tbs. lemon juice
  • ½ tsp. salt
  • 2 Tbs. olive oil
1. Preheat oven to 400°F. Wrap each unpeeled beet individually in foil.Place on baking sheet, and roast 40 minutes, or until beets are tender enough to be pierced with knife. Cool until easy to handle.
2. Grate 1/2 tsp. zest from 1 orange; set zest aside. Trim ends away from both oranges, stand fruit upright, and remove peel and pith with knife.Hold fruit over bowl (to catch juice), and cut segments from membranes. Cut each segment in half, and place in separate bowl.
3. Whisk together 2 Tbs. orange juice (in bowl), vinegar, orange zest, lemon juice, and salt. Gradually whisk in oil.
4. Peel beets by rubbing off skin under cold running water. Cut beets into 1-inch pieces, and add to bowl with orange segments. Top with vinaigrette, and toss well. Chill several hours, or up to 2 days.

We served this with some very odd meatless chicken nugget things.  It was in all a very different sort of dinner.  Very healthy!

The 3 Imposters!

My darling sister wanted me to share this ridiculous picture of us posing like crazy imposters.  Yes, I know it is a bit fuzzy, but you get the gist of it!  We are trying to make funny memories and having a ball doing it!  It is loads better than costumes at the fair that everyone has worn, you know, where you dress for a saloon picture and pay for it later.  Well, here is our girls shot.  I don't know what I am supposed to be doing but I look silly and they look menacing!  Hope you like it!

On the Box.

Gran!  I love it!  Thank you!  Here is Gran at Target and she has stumbled on yet another place you might see Casey on the box.  Now, that being said, everytime she finds a box, we go out and try to find it here and to our dismay, we don't find anything.  Oh well!  If you see a box, have someone take a picture of you in front of it and send it to me via email.  I would love to blog it and say where you found your box!  Happy Thursday!

A few random pictures from the last months...

My two oldest darlings!  I do think they are a bit nutty, yes, but these are wonderful genetic qualities, don't you think?

You must think that he looks like a girl here, as you should, because he did... the long hair is gone now...

Gran visits, and we had a blast sneaking around!  This was conveniently located @ the grocery store.  Yes, in fact, it is Whole Foods.  It was charming!  There was a man there from Fresno, Ca., odd, but fascinating.  There is also a girl in my Tx. govt. class from Fresno, what are the odds?

Hanging out at a house we are touring.  We are looking to buy, and the kiddo's are anxiously awaiting a new home with a playground.  Sigh- soon I hope!  This is grandma Kim also referred to as grandma Ed (by Reagan).

Here is my cool dude!  He went golfing with daddy and wanted to wear a hat and shades just like him. They ended up having a blast!  I was thrilled!

Just so you might see that the kids are REALLY NUTS!

This is today!  Taylor thought he would put his remote control car into Reagan's hair...  I tried for a long while to untangle it, all the while dreading having to cut a huge chunk out.  The other day, I had to cut gum out of her hair...  What to do, what to do???  Another sigh here...

Great Grandma Gigi is so funny!  She loved playing with the kids and dog!  I love her face here!

Looks like these two cousins are never too tired to pose!

Grandma Cheryl and Tint (as his sister calls him.)

Mommy and princess on the River Walk boat tour with the family from Fresno and Arkansas.

Grandpa Bob with Missy.

Here we were on a wet, rainy day and loving the caverns, which were amazing!

My lovely, fashionable sister, (Wish she lived closer!) here with dad.  I really love this pic!

Crazy girl!

Yes, it's ladies night...

Because he doesn't smile that often!!!!!!!!!!!!!!!

Watch out... Who put that bowl in his reach?  Yes, I know you thought it was far enough away, but well, he has go-go gadget arms.  Oh, and an appetite to boot!

Yes, we caught you!  Bummer!
